Caravan-Friendly Spring Recipe: Lemon & Herb One-Pan Chicken

Spring is the perfect time to enjoy fresh, light meals that are easy to prepare in a caravan kitchen. This Lemon & Herb One-Pan Chicken is packed with seasonal flavours, requires minimal washing up, and can be cooked on the hob or in a small caravan oven. It’s simple, delicious, and ideal for a relaxing meal after a day of exploring.

WHY IT’S CARAVAN-FRIENDLY

  • One-pan cooking – Less washing up!
  • Minimal ingredients – Easy to store and prepare.
  • Quick & nutritious – A balanced meal packed with flavour

INGREDIENTS:

• 2 chicken breasts (or 4 boneless, skinless thighs)
• 250g baby potatoes, halved
• 1 courgette, sliced
• 1 red pepper, sliced
• 2 cloves garlic, minced
• Juice and zest of 1 lemon
• 2 tbsp olive oil
• 1 tsp dried oregano
• 1 tsp dried thyme
• ½ tsp paprika
• Salt & pepper to taste
• 100ml chicken stock (or water)
• Handful of fresh parsley (optional, for garnish)

METHOD:

1. Prepare the Ingredients
Slice the potatoes, courgette, and pepper so they cook evenly. Mince the garlic and mix with lemon juice, zest, and olive oil.
2. Cook the Chicken
Heat a large frying pan over medium heat and add a splash of olive oil. Season the chicken with oregano, thyme, paprika, salt, and pepper. Brown for 3-4 minutes on each side, then remove from the pan and set aside.
3. Cook the Vegetables
In the same pan, add a little more oil if needed, then sauté the potatoes for 5 minutes. Add the courgette, red pepper, and garlic, cooking for another 3 minutes.
4. Simmer & Finish
Return the chicken to the pan, pour in the chicken stock, and cover with a lid or foil. Simmer for 10 minutes until the potatoes are tender and the chicken is cooked through.
5. Serve & Enjoy
Garnish with fresh parsley and an extra squeeze of lemon. Serve straight from the pan for a fuss-free meal!
